Since the last post I've been up to cooking. I think either the day of or the day after the 10th I made Enchilada Soup with my mother, because she kept making it without teaching me and I wanted to learn the recipe, so I did. It was delicious, as it always is, but to me it was better because I learned how to make it and was pleased with the result. I am always proud of myself when I make a dish successfully, as should you.
Then yesterday for dinner I made a Chicken Pot Pie Soup. It was difficult in the beginning, and the roux got a little burnt, but other than those struggles it was very pleasurable. My dear friend got to be a taster as did the makers of the food. Biscuits went with the soup and they added to the tasteful with a slight burnt taste of the soup! Then after the food we watched the movie Dear Frankie. Such a beautiful story and so sweet, the only problem? The ending, but I still recommend watching it, which is I will give no more details, except watch out for the hospital scene, a naughty word pops up.
And today, today I will be making a Chicken Alfredo Baked Ziti. Am I excited? Yes, always when making an easy, delicious meal that takes less than an hour to make and cook. Who wouldn't?
Now in other news Sundays are the best, don't you agree? I mean we get to listen to these wonderful talks, which at first glance you wouldn't necessarily attribute to yourself, and then it makes sense when applying it to our lives. In addition, all the songs you sang that day, you knew and rocked singing it because you knew them. Best ever!
More news. I've been pondering on the thought of becoming an Art History Teacher in either High School or College. High School because I would be able to go through great detail on almost everything I would talk about because it would be a year long class. College because I wouldn't necessarily have to go every day or early. Honestly, there are pros's and con's to both, and I haven't even decided if I actually want to be a teacher. We'll see.
Now that I have told you about the food I made, I will now share the recipes so if you have the desire to make them, you can!
Zuppa's Enchilada Soup
1 1/2 C shredded chicken 1 C chopped onion
2 cloves of minced garlic 2 C broth (v-8)
2 15oz cans of diced tomatoes 2 15oz of drained cans of black beans
1 7oz diced green chilies 2 T jalapeño juice
2+3 T chili powder 1/2 t cumin
Salt + Black pepper to taste 1/2 t nutmeg (opt.)
Sauté onion and garlic in butter; add all ingredients except chicken and roux. Simmer till flavors combine. Slowly add roux; add chicken. Simmer till chicken is hot
1/4 C butter 1/4 C flour
1 1/2 C half n half (or evaporated milk) 4oz Velveeta (or 1 C grated cheese)
Melt butter in saucepan at med-high heat, add flour, whisk till smooth and bubbly. Add milk, whisk till smooth, slowly add Velveeta. Stir till cheese is melted. Add to soup.

In other news, I finished my book! Stealing Rembrandt's is a very intriguing and interesting book. I learned that part of the reason they wrote the book was to inspire people to not steal amazing works of art, but to also inspire those who might know something about a stolen piece to speak up. All in all I loved it because it's about art history and I learned more amazing things!
